Efo riro is a vibrant and flavorful Nigerian vegetable stew originating from the Yoruba people, with its name meaning “stirred leafy greens.” This beloved dish is prepared with spinach simmered in a rich pepper and onion base with palm oil. Enhanced with addition of crayfish, locust beans (iru), and a variety of assorted meats or fish. Commonly enjoyed with fufu, amala, or eba, and also pairs well with rice or yam.
